R - Reading
I squeezed in several graphic novels and finished The Anxious Generation this week. I also started listening to Done and Dusted on audio through the Libby app. I got a notification that our library is closing again for another month to finish out ongoing renovations. I had to return all our library books on Saturday but I’m putting together a recap of our borrows to share soon. For now, here’s my July reading recap:
E - Eating
I grew up between Georgia and South Carolina but I wasn’t introduced to chicken bog until college when a friend from Myrtle Beach said she grew up eating it. When another friend texted me this week saying she was planning to cook the dish for her dinner, I immediately knew it would be the perfect recipe to use up some ingredients I had on hand. Sometimes called chicken pilau or “perlo”, it’s a staple of the South Carolina diet. The exact origin is unknown but it’s thought to originate from slaves forced to work in the rice fields and highlights the state’s deplorable agricultural history. It’s an affordable one-pot meal made with accessible staples like rice, chicken, sausage, and broth that nods to the flavors of West Africa and Spain. I used up some carrots and celery from our fridge to give mine a bit more flavor and cooked it in the Instant Pot to cut down on time. It’s the perfect hearty and comforting dish for any time of year.
P - Playing
Cults has a new album out called To the Ghosts. The song Leave Home is an early favorite.
O - Obsessing over Observing
I’ve already noticed a huge shift in our weeknight rhythm now that my husband gets home from work before me. We’re able to divide and conquer chores and as a result, our kids are in bed earlier and we’ve had more time to relax. Feeling less harried is something I could get used to!
R - Recommending
If you’re a Peacock subscriber, I recommend watching the Top Olympic Highlights in the evening. It’s tough working and missing all the live events during the day! Other than watching some of the equestrian events in the morning, I’m not able to see much live.
T - Treating myself to
A mid-week frappuccino.
