I love to cook. Almost as much as I love to eat.
Unfortunately, it takes too much time in the evenings when my kids are always ready for a meal the second we walk in the door. I’m trying to work smarter and not harder so I’m learning to accept that this is not the season for elaborate meals.
Things I’ve cooked recently that my 4-year-old has literally given me a thumbs up for serving at the dinner table:
beef soft tacos
spaghetti and SpaghettiOs.
fish sticks and french fries with ketchup
boxed macaroni and cheese
chicken pot pie
green beans from a can
Beef Stroganoff Hamburger Helper
corn dogs
pepperoni (aka peppermogi) pizza, although this week she doesn’t like pepperoni but likes mushrooms
McDonald’s hotcakes and sausage
ramen noodles
salad (tomatoes, lettuce, cheese and dressing)
I would feel guilty for serving so much packaged crap but I don’t because she eats (at least) an apple a day and at least she’s eating something. IYKYK.
Will this be the year I stop cooking for fun? Nah, it’s all about perspective. I’m looking at it as a challenge to test the limits of what I can create with a can opener, baking pan, and microwave.
